Pancake Sunday

There is a long standing tradition in our family to have pancakes every Sunday morning. Most Sunday's you can see Henry and Papa working side by side at the kitchen table. Flour scattered on the floor, ingredients litter the table, a great big bowl of batter, sink full of dishes. I baffles me as to how these two can make such a mess preparing one easy meal. Thank goodness they don't cook every meal.
This Sunday, however, Papa was out in the first pheasant hunt of the season. Naturally, it was to be my turn at the helm, whipping up some warm homemade pancake goodness. Today's mama mix included sunflower seeds, walnuts, wheatgerm, flax seed, agave, cinnamon and brown sugar. We topped it with homemade blueberry syrup that we made this summer. Yum-O!!!


Henry's Homemade Pancake Mix
1 1/2 cup of flour (we use a white and wheat mix)
3 1/2 tsp Baking Powder
1 tsp Salt
1 1/4 Milk (we use vanilla almond milk)
1 Egg
3 tbsp melted Butter
Splash of Vanilla
Mix together. You may need to add some water to make it thinner.

Add ins optional:
Oatmeal
Walnuts
Seeds
Wheatgerm
Flax seed
M & M'S
Chocolate Chips
Ginger
Apples
Pumpkin
Clove
Cinnamon
Fruit

It is so easy to add any of these into the mix. Also the basic pancake mix makes a wonderful jarred gift. Throw in some real maple syrup or some homemade fruit syrup and you got yourself a really nice treat to leave under the tree.
